Keto Peppermint Brownies
Keto Peppermint Brownies

Serve these warm and moist as is or top with with Keto Whipped cream or a scoop of coconut ice cream.
Ingredients
- ¾ cup blanched almond flour 
- ½ cup Swerve confectioners style sweetener 
- ¼ cup raw cacao powder 
- 1 teaspoon of baking powder 
- ¼ teaspoon of salt 
- 3 oz of cream cheese, softened 
- ¼ cup (½ stick) unsalted butter, softened 
- 2 large eggs, beaten 
- 1 teaspoon peppermint extract or 10 drops of peppermint essential oil 
- ⅓ cup chocolate chips 
- Confectioner’s style Swerve sweetener, for dusting (optional) 
Directions
- Preheat the oven to 325˚. Spray an 8-inch square baking pan with nonstick cooking spray or line with parchment paper. 
- In a medium-sized mixing bowl, combine the dry ingredients and whisk to blend. 
- Add the cream cheese, melted butter, eggs, and peppermint extract or oil. Mix until well blended. Fold in the chocolate chips. 
- Pour the batter evenly into the prepared pan and smooth the top. Bake for 35-40 minutes, until a toothpick inserted in the center comes out clean. Let cool. 
- Dust with sweetener, if desired, then cut in 2-inch squares.
