This is a wonderful healthy and high protein snack just perfect for the holidays. It is grain, dairy and refined sugar free.

 

 

Ingredients

5 cups finely shredded coconut

1 cup almonds finely ground or 1 cup almond flour

1/2 cup maple syrup

1/2 cup local honey

1/4 cup water

2 vanilla beans (scraped - see note below)

4 T melted coconut oil

1/4 t sea salt

1/4 cup goji berries

1/4 cup cocoa nibs

 

Directions

Mix all ingredients together in a large bowl. Press firmly into 1" balls. If the dough doesn’t see to stick together add more water a little bit at a time until the balls hold their shape when squeezed together.

Dehydrate 135˚ for 6 hours or place in the refrigerator till firm.

How to scrape a vanilla bean:

  1. Split the pod lengthwise into two halves:

  2. Scrape the pod halves: Still holding the hooked area down on the cutting board, run the unsharpened side of your knife down the length of each of the pod halves, using firm pressure.
