Kiwi Mango Bowl

Serves 1: GF, DF, Vegan

Ingredients:

1 large Roasted Sweet Potato (recipe below), chopped and cooled

1 tablespoon coconut oil

½ cup dairy-free milk

½ teaspoon pure vanilla extract

1 teaspoon cinnamon

Pinch sea salt

1 scoop plant-based or collagen protein powder

½ mango, chopped

1 kiwi, chopped

1 tablespoon unsweetened dried coconut flakes

1 tablespoon hemp hearts

Add chopped roasted sweet potato, coconut oil, milk, vanilla, cinnamon, salt, and collagen to a food processor. Puree until smooth, then scoop into a serving bowl.

Top with mango, kiwi, coconut flakes, and hemp hearts.

Roasted Sweet Potato

Serves 4: GF, DF, Vegan

Ingredients:

4 large sweet potatoes

Preheat the oven to 425 degrees F.

Place sweet potatoes onto a baking pan. Place into a hot oven and bake for 45 minutes to 1 hour.

The sweet potatoes are done when you can pierce the center with a

fork or knife without resistance.
